Abstract

In this chapter the role of the gut in determining the quality of protein alone or in a mixed meal is outlined. In view of ingesting bolus meals, apart from digestibility and absorption the ability of meal contained protein to be slowly released as amino acids in the portal vein determines their utilization for anabolic purposes.
