Sustainability assessment of processing bio-based colourants for packaging applications

Description

The use of biobased colourants, such as curcumin, is not free from environmental burdens and, therefore, sustainability assessments are required to investigate such limits. This work provides a new approach for sustainability studies that wish to include material or additives functionalities in the food packaging evaluation through the inclusion of the food value chain in the packaging environmental assessment.
